December 14th Holiday Party at Liberty Fields Farm, Saco where it was —
Holiday Tomme!
What a great event.
Besides the warm and spirited hosting by Liberty Fields Farm, our Holiday Party featured seven different Tommes made from the same recipe but each bearing the flavor, milk type, local flora and personality of the cheesemakers around the state. There were hard and soft pate’s, there were buttery and silky textures, there was “goaty” and “cow-y” and complex flavors — sometimes all in the same cheese (Appleton Creamery brought a triple-milk version). There was also bright red local membrillo to accompany the panoply of personal cheeses. It was a lesson about how much of the local cheesemaker goes into making their cheese.

Silvery Moon Creamery is located at Smiling Hill Farm in Westbrook, Maine. The farm is located on 500 pristine acres just minutes south of Portland. The Knight family has been farming the same hills since the 1700’s and the name is syonoymous with quality. Today Smiling Hill Farm is home to 50 registered Holsteins who are out on pasture seven months of the year. The farm is well known for their full line of glass bottled milks, ice cream and butter. In June of 2003 cheesemaker Jennifer Betancourt partnered with the Knight Family to create Silvery Moon Creamery and the results of this partnership have been delicious. We are crafting over a dozen varieties of cheese, including Camembert, Westbrook White, Rosemary’s Waltz, Tally Ho with Peppercorn, Aged Farmhouse Cheddar, Crème Fraiche, Fresh Mozzarella, Fresh Cheddar Curd, Herbed Curd, and more! We received three awards at the American Cheese Society’s 2004 Competition.

Kennebec cheeses reflect the mix of cheese makers, Kiwi and Yank, bringing pastoral skills and recipes from New Zealand back to the family farm in Sidney, Maine.
We handcraft small batches of cheese and yoghurt from Alpine goat and organic Jersey cows’ milk. The goats are raised on pasture and GMO-free grain here on Koons Farm and Willie raises his cows on nearby Woodside Farm.
Our products include: Chevre Cobbles, Plain or rolled in Herbes de Provence, Cracked Pepper or Dill, Chevre Cobbles in olive oil with either sulphur-free Sundried Tomato and Chili Pepper; Basil, Garlic and Pine nuts; Rosemary, garlic and peppercorns; or Herbes de Provence; and a fresh goat Feta. Our Yoghurts, (goat, cow- full cream or low cream) are pure plain milk with live yoghurt culture. On their own, with maple syrup, or with your own berries, they are delicious.
Coming soon is our New Zealand recipe, mold-ripened Messalonskee cows’ milk brie and Snow Pond goats’ milk brie.
