Edible Rind is Maine's newest licensed creamery, located in Scarborough that specializes in organic hand crafted cheese. Our cheese is certified organic by Maine Organic Farmers and Gardeners Association (MOFGA).

We believe that great cheese comes from great raw milk. Organic stewards of the land, Mike and Rick Guillemette, father and son team at Brook Ridge Farm in Lyman Maine along with their gentle natured herd of milking shorthorns provide us with pristine milk with gobs of golden butterfat floating on the top. High butterfat and high protein levels are excellent qualities for cheese making.

Fitting with the long standing tradition of artisanal foodways, Edible Rind uses small batches of the freshest milk along with hand dipping, hand salting and hand turning all of our cheeses.

Our first cheese is a soft bloomy rind cheese in the tradition of the great Camembert. Named Essence, our cheese has a deep mushroom nose and a fluffy edible rind, right under which is a creamy, oozy portion encircling a slightly chalky textural heart.

We are developing other cheeses and they are aging peacefully in our caves. When perfectly ripe, we will pass on the retail and restaurant locations where you may find us. To paraphrase from our wine friends, we will serve no cheese before its time...

We are grateful to be producing cheese in the Portland area. Gifted chefs, savvy cheesemongers, farmers and store owners as well as devoted foodies are all contributing to a strong locavore movement. We vigorously support MOFGA, Slow Food Portland and the Maine Cheese Guild.
